If you want to sin once in a while, do it in a healthy way 🙂 Cookies
You make a big “griddle cake” that you can break into pieces later.
What do you need.
* 100 grams of whole wheat (spelt) flour
* 100 grams of oatmeal
* 100 grams of unsulphured raisins
* About 8 dates (seedless and unsweetened!)
* half level teaspoon of salt
* Also add a teaspoon of spice or cinnamon
* 1 teaspoon (tartar) baking powder
* 100 grams of creamed butter or coconut fat (extra virgin)
* 2 teaspoons (goat) milk
Optionally add extra; 1 teaspoon speculoos, 2 tablespoons sesame seeds, 1 tablespoon carob powder
Put the raisins in the food processor and turn it on briefly until the raisins are well chopped.
Mix together all the ingredients except the butter and milk in a large bowl.
Add the butter and knead the dough until it looks like bread crumbs.
Add 2 teaspoons of milk to make a nice cohesive (but not too wet) dough.
Put the dough in a sealed container or plastic wrap and let it rest in the refrigerator for 15 minutes.
Preheat the oven to 180 degrees Celsius.
Then flatten the dough into a baking pan lined with wrapping paper.
Bake the cookies in the oven for 15-25 minutes until light brown (baking time depends on your oven)
Carefully lift the baking sheet from the baking pan and cut into strips. The cookies are fairly fragile, especially when still warm.
When the cookies are completely cooled, you can store them in a drum/ tupperware box
NB: the crumbs are delicious in yogurt 🙂
