You can have this dish for breakfast, lunch or dinner. Many people have asked about alternatives to breakfast. Some of you mainly want to lose weight, others want to build muscle mass and lose fat. If you use this dish for breakfast, it gives you lots of protein, lots of vegetables and an actual filling feeling until lunch. You can use the dish with bread or with brown rice.
Whether, and how much bread or rice you take depends on your personal nutrition plan. If you eat low-carb (primal/paleo diet and so on) leave out the bread or rice.
The recipe below is for 2 people. You’ll keep a photo. I had forgotten to take that one last time.
I myself make it occasionally when there is little time to cook, as lunch or even breakfast.
Required for 2 people:
– 6 Organic eggs
– 600 grams of stir-fried vegetables (leeks, peppers, carrots, broccoli, onions, etc.)
– 4 tablespoons of olive oil
– Spices to taste (Oregano, Basil, Turmeric, Black Pepper, Ginger, Garlic etc)
– Sea salt to taste
Preparation:
– Beat the 6 eggs in a bowl and add the herbs, spices and sea salt.
– Stir-fry the vegetables in a skillet with the 4 tablespoons of olive oil
– Add the eggs from the bowl (spread over the vegetables and stir through)
– Cook slowly. Once a “cake” forms divide the omelet into quarters with a trowel and flip the pieces over
– Cook the pieces on the other side as well.
As indicated earlier, you can serve with rice or bread if you wish.
Drizzle with some extra olive oil if necessary.
After eating, you can have some pistachios if you want.
How much and whether you can eat them obviously depends on your goal whether you want to lose weight, gain weight, etc., for example.
